Pumpkin Roll
1 cup sugar
3 eggs
2/3 cup pumpkin
1 tsp baking soda
½ tsp cinnamon
¾ cup flour
Nuts – optional
Beat sugar into eggs, then add pumpkin, baking soda, cinnamon and flour. Grease large jelly roll pan or cookie sheet (10x15) and line with waxed paper. Grease waxed paper too. Pour in batter and sprinkle with chopped nuts. Bake at 350 degrees for 15 minutes. Roll up long ways in a clean dish towel which has been sprinkled with powdered sugar. Let stand 1 ½ hours. (note: peel off waxed paper before rolling.)
Filling:
8 oz cream cheese, softened
2 tbs softened butter
1 cup powdered sugar
Dash vanilla
Whip above ingredients. Unroll cake and spread with filling. Reroll and wrap in foil, Refrigerate. This is better the next day and it freezes well,

Toffee Bars (WARNING! This stuff is like crack!)
Use a small cookie sheet or jelly roll pan lined with parchment paper.
Cover the bottom of the pan with saltine crackers
In a sauce pan bring two sticks of butter and 1 cup of sugar to a boil, keep stirring for about 3 minutes.
Pour this carefully onto the crackers, smooth it out to the edges. You have to be gentle so the crackers don’t move around.
Put this into a 400 degree oven for 10 minutes.
Remove from oven and sprinkle one package of semi sweet chips, let them sit for a minute, when they start to melt smooth them out over whole pan.
Last add chopped nuts, you can use whatever you like.
Cool or put in the frig until firm.
Break it into pieces.

1 Cup crunchy peanut butter
1 Cup sugar
1 egg
Beat peanut butter and sugar together, add egg. Form into small balls, roll in sugar, place on cookie sheet. Press with fork. Bake at 350 degrees for 5 minutes.

1/2 Cup oil
1 3/4 Cup sugar
2 eggs
1 tsp vanilla
1/2 Cup milk
4 Tbsp cocoa
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 1/2 Cups flour
2 Cups shredded zucchini
1/2 Cup chocolate chips
Cream together butter, oil and sugar. Beat in eggs, vanilla, milk, cocoa, baking soda, cinnamon and salt. Add flour and stir until moist. Add zucchini until well-mixed. Pour into greased or lined muffin tins, sprinkle chocolate chips on top. Bake at 350 degrees for 30 minutes.

Macaroon Kisses
1/3 Cup butter
1-3 oz package of cream cheese
3/4 Cup sugar
1 egg yolk
2 tsp almond extract
1 1/2 Cup flour
2 tsp baking powder
1/2 tsp salt
4 Cups flaked coconut
Hershey kisses
In large bowl, cream butter, cream cheese and sugar until fluffy. Beat in egg yolk and extract. Combine flour, baking powder and salt. Gradually add to creamed mixture and mix well. Stir in 3 Cups coconut. Cover and refrigerate for 1 hour. Roll into 1 inch balls and roll in remaining coconut. Place 2 inches apart on ungreased cookie sheets. Bake at 350 degrees for 10-12 minutes. Immediately press a kiss into the center of each cookie. Cool on pan for 2-3 minutes, then remove to wire rack to cool.

Oatmeal Cranberry White Chocolate Chunk Cookies
2/3 Cup softened butter
2/3 Cup brown sugar
2 eggs
1 1/2 Cups oats
1 1/2 Cup flour
1 tsp baking soda
1/2 tsp salt
1-6 oz package craisins
2/3 Cup white chocolate chips
Preheat oven to 375 degrees. Beat butter and brown sugar in medium bowl until fluffy. Add eggs, mix well. In a separate bowl, combine oats, flour, baking soda and salt. Add to butter mixture in several additions, mixing well after each addition. Stir in craisins and chocolate chips. Drop by rounded spoonfuls onto cookie sheets. Bake 10-12 minutes or until golden brown.

Banana Bread
1 1/4 Cup sugar
1/2 Cup butter
2 eggs
3 mashed bananas
1/2 Cup milk
1 tsp vanilla
2 1/2 Cups flour
1 tsp baking soda
1 tsp salt
Move oven rack to low position so tops of pans will be in center of the oven. Heat oven to 350 degrees. Grease bottom and sides of a large loaf pan. Mix sugar and butter in large bowl. Stir in eggs until well-blended. Add bananas, milk and vanilla. You can either use a beater to make it smooth, or I use a potato masher to mix it, to keep larger chunks of banana. Stir in flour, baking soda and salt just until moistened. Pour into pan. Bake 75 minutes, or until toothpick inserted in center comes clean.

Almond Brittle
1 stick butter
1/2 Cup sugar
1 Tbsp light corn syrup
1 Cup slivered almonds
In a nonstick pan, melt butter. Add sugar and corn syrup. Stir all together. Add almonds. Stir on high while boiling 4-5 minutes until sugar turns golden brown (not any longer or sugar will start to burn). Pout into a foil-covered pie plate that is greased. Spread out to sides. Once completely cooled, break into pieces.

And there you have it! I didn't include the sugar cookie recipe, because frankly, it's not that great. I also didn't include the recipe for the rice krispie treats since you can find that on any rice krispie box or marshmallow bag. I would absolutely make all of these things again. The macaroon kisses weren't my absolute favorite, but they were still good, especially if you like coconut. Hope you all can try these out sometime!

Try making your toffee bars with crushed up pretzels on the bottom....I saw them do it on the food network the other day. I hope you bring some of this yummy stuff with you if you can, or we can just make our own.
