Get In My Belly!

Part of my yearly goals was to cook 20 new recipes from Pinterest...so I have two delicious ones for you!



Baked Parmesan Tomatoes


Ingredients
  • 4 tomatoes, halved horizontally
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon chopped fresh oregano
  • 1/4 teaspoon salt
  • Freshly ground pepper, to taste
  • 4 teaspoons extra-virgin olive oil 
Directions
  1. Preheat oven to 450° F.
  2. Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.
 I did without the olive oil to save some calories, and they tasted just fine. It was a really good, healthy addition to our meal the other night! Definitely be making it again!

 Crock Pot Cream Cheese Chicken Chili


Ingredients
  •  2 frozen chicken breasts
  • 1 can rotel tomatoes (with green chilies)
  • 1 can undrained corn kernels
  • 1 can drained and rinsed black beans
  • 1 package Ranch dressing mix
  • 1 Tbsp cumin
  • 1 tsp onion powder
  • 1 8-oz package cream cheese
Directions

  1. Throw all the ingredients in the crock pot and cook for 6-8 hours, stirring once or twice to mix in the cheese.
  2. Shred the chicken and serve over rice.  

This was DELISH! I loved it and will definitely be making it again!
